The Whammy Bar (With Great Food)

Developed a 120 seat contemporary casual musical lounge appealing to the over 23 but under 50 crowd who enjoy light foods and their beverages while enjoying lively music at reasonable prices. This bar facility was planned to compliment a professional Music Venue catering to affluent young business and professional women. It has become the "in" place to enjoy an afternoon and evening either before or after attending the adjoining reknowned "Music Mill" auditorium.

The Brown Bag Café

Designed to fill a market for early morning coffee and snacks as well as light lunch fare for business people on the go. The concept was designed for a class "b" or "c" mall location of no more than 900 square feet, operated by a staff of three. Services offered are quick carry-out, casual inside seating and lunch delivery as well as catering by appointment.

Illinois Railway Museum

Designed the fast food system for the major railroad theme park in Illinois. Specified all equipment and suggested preliminary opening menu. Submitted detailed layout to Architect and made revisions as requested.

Pot Belly Sandwich

Was contracted to evaluate value of the original Chicago location. Carefully reviewed all phases of the operation and determined an appraised value far in excess of the founder’s expectations. This appraisal became the basis for financial planning which permitted a successful major expansion which is still continuing.

Pepe's Mexican Restaurant

Developed a new modern image for the franchisee/operator who desired an upscale Mexican style decor to announce his Mexican food items directed for young active American diners.

Phil Smidt's

Acted as menu advisor to provide topical menu offerings and to create marketing strategies for a leading historic fish house restaurant.

McNamara's

Worked closely with an inexperienced Irish couple to create a friendly pub and dining atmosphere. Achieved goal of high value menu items attractively priced, aimed at middle class America.

Lighthouse Cove

Overcame formidable government obstacles to create a workable food and entertainment facility adjacent to a major marina complex. Proposed and implemented facility design and menu mix.

Elliott's Off Broadway

Reviewed marketing and suggested down-to-earth strategies for upgrading sales in this chain of office building fast service delis.

Gusto Italiano

Authentic Italian restaurant wished to expand the scope of its marketing. We assisted in developing a new marketing strategy to attract lunch and banquet business. Proposed an old world pizza offering which was widely accepted.

Louie Le Deaux

Worked with promoters of a novel southern concept to create the financial package for this prototype family restaurant.

Created the Australian theme for this unique family style restaurant/bar. Prepared the financial documents for this prototype investment opportunity.

Lac Vieux Desert Resort Casino
